Supporting Erasmus University Rotterdam in signing a campus-wide Planetary Health Diet covenant.
Erasmus University Rotterdam aimed to make its campus-wide hospitality offer more sustainable and aligned with the principles of the Planetary Health Diet. The objective was to translate this scientifically grounded framework into concrete, practical steps for all foodservice operations on campus. Through The Sustainable Food Route, Conceptional supported Erasmus University in the process leading up to the signing of the Planetary Health Diet covenant.
Together with campus entrepreneurs, a shared strategy was developed towards a future where food choices contribute to both human and planetary health.
In collaboration with all partners involved, clear ambitions for 2030 were defined: 80% plant-based procurement across all foodservice outlets | More than 50% plant-based menu options for foodservice and food retail | 50% reduction in CO2 emissions compared to 2025 for foodservice and food retail. The signing of the Planetary Health Diet covenant marks an important step towards a healthier and more sustainable campus. It provides a foundation for continued collaboration between education, research, and operations to create lasting impact.
