Together, we created NOMON : an all-day dining destination that combines accessible luxury with coastal comfort. Our scope encompassed the entire process: from defining the F&B vision and positioning to developing the concept and storyline, establishing the menu architecture and guiding tastings, and designing the kitchen, bar, and breakfast areas with complete functional layouts. NOMON’s offering consists of grilled proteins, seafood, and coastal-style tapas, paired with cocktails inspired by the journey of the sun – all served in a refined yet relaxed atmosphere that seamlessly transitions from morning to late evening.
