What It Takes to Succeed in MENA’s F&B Sector?

Insights from Andres Gonzalez, Managing Director MENA at Conceptional, on consumer shifts, innovation, and the future of F&B in the region.

Introduction

The Middle East is one of the fastest-evolving regions for food, leisure, and hospitality. With ambitious development plans, global events on the horizon, and a growing appetite for meaningful experiences, success in this market takes more than a good concept — it requires deep regional knowledge, operational strategy, and cultural insight.

We spoke with Andres Gonzalez, who has been working closely with operators and investors across the region for more than 15 years. In this interview, he shares his perspective on what it takes to succeed in MENA — from consumer shifts and immersive dining to market misconceptions, homegrown innovation, and the role of tech and sustainability in shaping the future.

I. Understanding the Market: What Makes MENA Unique

The MENA region is evolving rapidly. From your perspective, what are the biggest trends shaping the food and beverage industry in 2025?

One of the most significant trends we're seeing is a stronger commitment to sustainability. Restaurants and foodservice operators are focusing on locally sourced ingredients, reducing reliance on imports, and integrating eco-conscious practices into their operations. Another major shift is towards immersive dining experiences: people want more than just a meal; they want storytelling, sensory engagement, and entertainment all in one. Lastly, luxury dining projects are redefining high-end gastronomy, with destinations like NEOM and The Red Sea Project integrating technology, sustainability, and local heritage into their concepts.

What's the biggest misconception companies have when entering the MENA market?

That it's enough to bring a successful international brand and expect it to work without adaptation. But this region demands more than a plug-and-play approach. You need to truly localize, not only the menu, but the concept, the experience, and the way you operate. The most successful brands here are the ones that take the time to listen, understand, and build for the region—not just in the region.

Why is a deep understanding of the region so essential for building successful concepts in MENA?

Because this market is unique, and rapidly evolving. The region is no longer just about 'gold and glory,' chasing trends without structure. Today, success here means having well-thought-out projects that resonate locally. It means understanding customer segmentation, competition, and the cultural nuances of different markets—what works in Dubai may not work in Riyadh.

I've been based in the region for 15 years, and this time on the ground has shown me that projects with longevity are those built on strong operational foundations, realistic financial models, and culturally relevant storytelling. It's no longer just about flashy openings—it's about creating meaningful, scalable, and future-proof businesses.

II. Consumer Expectations & Concept Innovation

Which F&B concepts in Dubai, Abu Dhabi or Riyadh do you think are really setting the bar, and why?

A few concepts come to mind that are truly redefining their categories through clever positioning and strong execution.

ZAZA Pizza is a great example of a brand that's filled the gap between casual dining and QSR delivery pizza. It offers an elevated fast-casual experience that resonates with guests looking for something more refined than a quick slice, yet more approachable than a full-service pizzeria. The quality of the product, combined with a relaxed but well-designed setting, hits the sweet spot for today's urban diners.

Eleven Green Burger Bistro has been around for a couple of years now, but still feels like one of Dubai's best-kept secrets. It's another elevated fast-casual concept that stands out thanks to its award-winning burgers and unique setting—think stylish interiors with a touch of university lecture hall nostalgia. It's a place that proves you can blend culinary excellence with a clear, original brand identity.

Are you seeing any new shifts in consumer preferences?

Absolutely. Consumers, especially younger generations, are looking for authentic, experience-driven dining. This means interactive kitchens, theatrical plating, and venues designed to engage all five senses. At the same time, cultural fusion is becoming more prominent—Middle Eastern flavors are merging with global trends like plant-based cuisine and molecular gastronomy.

What's one key piece of advice you would give to businesses looking to succeed in MENA's evolving landscape?

Ensure business planning is based on solid understanding of market dynamics, consumer trends and the support of subject matter experts. The region is currently attracting companies from all over the globe at various levels of skill, be sure to spend time and resources on sourcing advisory services that are right for your F&B venture. While creative agencies may be able to create highly professional branding documents and presentation decks, knowledge of the operational, commercial and financial sides of having an F&B portfolio can only be provided by companies with the understanding of the industry and the more likely challenges you will face as a restauranteur.

III. Leisure, Technology & Business Opportunities

How is the leisure sector evolving in MENA?

We're seeing a huge focus on sports and entertainment infrastructure. With Saudi Arabia hosting the 2034 FIFA World Cup, investments in new stadiums and event spaces are skyrocketing. Additionally, event tourism is booming, with cities like Riyadh and Abu Dhabi attracting global audiences through concerts, festivals, and international business events. Another emerging trend is the rise of luxury microhotels, which cater to high-end travelers looking for intimate, exclusive stays within larger resorts.

What role is technology playing in these changes?

Technology is a game-changer across all sectors. In hospitality, we're seeing AI-driven personalization, where hotels can customize everything from room settings to local recommendations. In F&B, automation and smart kitchens are streamlining operations and reducing waste. Data-driven insights are also shaping leisure experiences—operators are using analytics to refine their offerings, ensuring they stay ahead of changing consumer behaviors.

If you had to highlight one major opportunity for businesses in the region, what would it be?

MENA is at a turning point. The businesses that embrace innovation, sustainability, and personalized experiences will be the ones that thrive. Whether it's through high-tech kitchens, immersive hospitality, or data-driven leisure concepts, the potential for growth is enormous. Those who move fast and stay ahead of these trends will position themselves as leaders in the region's next wave of development.
